I Stuck my Neck Out
Trying to get the correct timing for harvesting is one of the most risky decision for a winemaker, we spend a lot of time in the vineyards, watching the plants, looking for their ripeness, their correct balance between sugar, acidity and tannins.
This year the ripeness was a little bit late
, and everyone tried to wait in order to get more colour, tannins, and alcohol content; but every vintage must have his personality. In Bierzo, the grapes are not getting alcohol enough this year, but the plants couldn’t do it because of the water stress. Why should I wait?
I decided to harvest from September 13th to September 16th. I was «the very earlier one» in our region.
Hard decision? YES!!! But in my onipion: sincere one based on nature, and looking for balanced wine. It is time to taste the 3 micro-tanks where Demencia 2012 were fermented.
